A thermostatically-controlled 500 watt heating element causes wood to smolder for delicious barbeque smoke flavor. Because there is little inside air movement to dry out the meat, the resulting barbecue smoked food is exceptionally tender and moist; and, with moist cooking conditions, no water pan is needed.
